Sometimes I am at places that don't offer the ribeye, so I'll go for the NY Strip. I don't know. Do FANCY steak houses always have ribeyes? My wife doesn't enjoy the steakhouse experience like I do.

I've never heard of a decent steakhouse not offering ribeyes. It's like the main thing.

Heh, I keep forgetting we have nearly the same kind of propane grill. As the weather get colder, I will still be grilling burgers but going back to my common steak method.. newish non-stick high temp frying pan on high to sear for a couple minutes each side. If the steaks are really thick, I finish them off in the broiler a couple minutes. While you don't get any smoke flavor, they actually turn out way juicier at medium rare usually that way.

BTW what do you usually season yr steak with? I usually go just salt and pepper (with extra salt on the fat to help break it down) on something like ribeye.
