[RECIPE] Masas de Puerco Fritas

Cuban Fried Pork, my favorite Cuban dish, and one of my top ten favorite dishes in the world:

MARINADE
=======
1/2 cup olive oil
1/2 cup orange juice
1/4 cup lemon juice
1/4 cup lime juice
One entire fucking head of garlic (peeled, please)
1 tbsp salt

1. Place marinade ingredients in food processor or blender, blend until smooth.


PORK

2 lbs pork loin, cut into 1-1.5 inch cubes
2 cups lightly salted water
1/2 cup olive oil
1/2 onion, sliced into thin rings
Lime wedges for garnish

1. Place pork in bowl or baking dish, pour marinade over pork, mix well, put in the fridge and marinate overnight. You can marinate it less, but it won't be as good.

2. Remove pork from marinade, pat dry, and put in a large pot with water and oil.

3. Bring to boil, then reduce to a rolling simmer over medium, uncovered, and simmer for 30-45 minutes until water has boiled off.

4. Now you have to move fast, or it will burn. Once water is gone, and pork starts to brown in the remaining oil, turn/toss frequently to allow all sides of the pork to brown.

5. About a minute before it's done, toss in the onions and saute until softened.

Serve with lime wedges and Cuban black beans and rice.
