Jiza's Ghost Sauce (version 1)

Post by Jizaboz »

This is my first time attempting this but I thought it turned out well.

Ingredients:

1 large fresh Ghost pepper
1 large fresh hot house tomato from Mexico
1/2 of a small onion
Teaspoon of salt
2 Tablespoons white vinegar
1 Tablespoon olive oil
1 small glove of garlic
3/4 cup of water

1. Put on rubber gloves and cut the pepper into slices. Remove most of the membrane and throw it away. I've handled with my bare hands before and made sure to wash my hands 50x but I strongly advise against that.

2. Dice onion and smash or cut garlic on a cutting board. Throw pepper, onion & garlic into pot. Cook on medium heat about 5 minutes. Stir occasionally.

3. Dice tomato and throw in pot. Continue cooking on medium heat for another 10 minutes. Keep stirring occasionally.

3. Stir in water, vinegar, and salt. Bring down heat slightly when it starts to boil as you let it cook another 5 minutes.

4. Bring it down to a simmer (lowest heat), cover, and let it simmer for 20 minutes. No stirring at this phase.

5. Remove pot and pour contents into blender. Set blender to "liquefy" or "pulse" and blend contents until they become.. liquid!

6. Pour contents of blender into mason jar, seal it, and after the jar cools stick it in the fridge until ready to use.
