Ben's Famous Shepherds Pie. Lifted almost entirely from
here. But I remove the cheese because cheese belongs nowhere near this, and I tweaked some amounts.
INGREDIMENTS

2 tbsp olive oil
1 lb lean ground beef or lamb (technically, it has to be lamb to be a shepherds pie, but fuck it)
Half an onion, finely diced
Three cloves garlic, minced
2 tsp dried parsley
1 tsp dried thyme
1 tsp dried rosemary
(Modify herbs based on whatever you like and have on hand)
1.5 tbsp Worcestershire
2 tbsp tomato paste
2 tbsp flour
1 cup beef broth
1/2 cup each: frozen corn, frozen peas, frozen chopped carrots. Replace with fresh if you want, losers.
Salt/pepper
Mashed potatoes (I can do a separate recipe, but come on, you know how to make mashed potatoes,

Preheat oven to 400
1. In a big skillet, over medium high, saute the onion in the olive oil until soft, with some salt and pepper
2. Add beef/lamb, stir and break up until fully cooked, with some salt and pepper
3. Add garlic and herbs, stir for 30 seconds
4. Add tomato paste and Worcestershire, stir to combine, 1 minute.
5. Add flour, stir to incorporate, 1 minute.
6. Stir in the broth, bring to simmer.
7. Add corn/peas/carrots, stir in and let simmer until you like the consistency. Should be fairly thick. Taste all the while and add salt/pepper/more Worcestershire to your liking.
8. Dump it all into a 9x9 casserole or baking dish, or whatever you happen to have that'll hold it. Spread evenly.
9. Spread mashed potatoes evenly in a layer on top.
10. Bake 20-30 minutes until it's bubblin' and the top is starting to brown.
11. Remove from oven, cover, let sit 10 minutes.
