Except rolled up, and with chicken instead of beef, and with mole sauce instead of Ultimate Salsa #1.

And with rice next to it.

And with my grandma's hearing aid whistling in the background.

I do. I remember those times.

You could have at least posted a picture of someone eating a burrito. A hot chick or a puppy or a baby or something.

[RESSIPY] Anaheim Mole Burrito

Here was something I made up which was so darn yummy, I just had to tell the world!

1 chicken breast
2 Anaheim peppers (or Poblano, or whatever)
Some cheese
Some mole sauce
Some limes
Some olive oil
A tortilla

- Marinate chicken in juice of limes for as long as possible.
- Roast and chop the peppers (broil until skin blackened, put in bag for 15 minutes, then peel)
- Season chicken with S/P.
- Grill and slice the chicken.
- Put some cheese on the tortilla.
- Put the peppers on the cheese.
- Put the chicken on the peppers.
- Roll it up.
- Brush it with olive oil
- Bake it at 350 for 40 minutes.
- Smother with mole sauce.

Serve with Ben's Famous Mexican Rice (recipe to follow)

Ben's Famous Mexican Rice
----------------------------
1 cup long grain rice
2 cup chicken broth
Some diced onions
Some minced garlic
Some cumin
Some dried oregano
Some salt

- Fry onions/garlic in some olive oil.
- Fry uncooked rice for a couple minutes in pot.
- Add chicken broth and rest of ingredients.
- Simmer, covered, for 20 minutes.
- Remove from heat for 10 minutes.
- Fluff with fork and eat.
