Because I have less than nothing to do at work today, I will give you the recipe for this, so you can spend two days slicing your fucking hand open just like me:
Guyana Garlic Pork
=======
1. Get a pork shoulder.
2. Dice it up.
3. Parboil it for 15-20 minutes. <-- other recipes say, steep in vinegar/water mixture. I dunno, I just work here.
4. Meanwhile, crush up a shitload of garlic (1-2 heads), and a hot pepper or two, if you like, and then mix 'em all up with some salt/pepper and about a tablespoon of thyme.
5. Drain the pork, mix it with the above mixture, put it in a jar or some other container, and cover the entire mess with vinegar.
6. Store in the fridge.
7. Wait 2 days. Preferably in the kitchen, staring at the closed refrigerator door the entire time.
8. Drain the pork, deep-fry for 10-15 minutes until browned 'n' yummers.
9. Eat. You will probably eat the entire amount yourself, since you have been waiting to eat for two days at this point and are close to passing out from starvation.
Jamaican Peas & Rice
==============
1. Cook 3/4 cup uncooked red beans, a couple cloves of garlic, and some salt in 2 cups of water for two hours, until the beans are tender.
2. Add 1 cup coconut milk, a whole hot pepper (I cut the top off to make it a little spicier), a teaspoon of thyme, and a couple chopped scallions.
3. Bring to boil.
4. Remove hot pepper (unless you want it really hot).
5. Add 1 cup uncooked rice.
6. Simmer, covered, until rice is cooked and liquid is absorbed.
7. Eat, preferably while listening to Bob Marley, drinkin' a Red Stripe, and smokin' a fatty...
