When Asians are afoot, it's good to have a "go to" stir-fry sauce, so that no matter what you have on hand, you can easily whip up something they won't immediately barf onto your shoes!
This is not my final answer, I'm just noting it here because this was the one I used last night and it was pretty good so I don't want to forget the amounts:
1/2 cup mirin
1/4 cup light soy sauce
2 tbsp fish sauce
1 tbsp sesame oil
1 tbsp sugar
If you're interested, to use it, you stirfry up all your veggies and meats and shit, then add this sauce, and then add a slurry of cornstarch until the sauce bubbles and thickens, then you are done. Generally I find a slurry of 1 tbsp cornstarch + 1tbsp water does the trick.
