Jambalaya

Forget where I got this recipe... I've had it for a while. In any case, it satisfies.

Ingredients:
2 cups cooked ham, diced
1 cup chopped green pepper
1 cup chopped onion
10 oz sliced okra (it comes in handy frozen packages, but if you want to slice your own, be my guest)
1 14.5-oz can diced tomatoes -- Possibly more, if you like tomatoes more than I do. Which most people do.
1 cup chicken broth
1 cup water
1 tsp salt
1/4 tsp black pepper
1/4 tsp cayenne pepper
1 cup uncooked rice

Chop the pepper and onion, drain the tomatoes. If you're in my kitchen, which doesn't have a/c and is in Georgia, open a beer about now because you're already hot. Start drinking beer. Throw everything but the rice into a large skillet-- bring to a boil, then simmer covered for 10 minutes or so.

Throw the rice in, cover again, cook for 15-20 min (until rice is tender), stirring occasionally. Open another beer and eat. Marvel.
