I will now show you how to make the perfect HOME FRIES for you and yours. Fry a couple eggs, round out with a little sausage and bacon, and you are presently in Breakfast Heaven. Let's go:
BEN'S FAMOUS HOME FRIES
INGREDIENTS

2 medium russet potatoes
2 TBSP butter
2 TBSP extra-virgin olive oil
1 medium onion
Salt
Garlic powder (optional)
Smoked paprika (optional)
INSTRUCTIONS
-------------
1. Dice two medium russets, about 1/2-inch on the dice.
2. Preheat pan to about 4/10 on the burner. Once it's up to temp, we're gonna want two tablespoons of butter in there, melted along with 2 more tablespoons of EVOO.
3. Once butter is melted and foamed off, let's get those potatoes in there in a single layer. COVER the pan, and let it "sear and steam" for ten minutes.
4. Meanwhile, slice or dice a medium onion finely.
5. When the ten minutes are up, take the lid off, sprinkle the onions in there, stir it in, flip the potatoes, LEAVE THE LID OFF, and crank the heat up to about 6/10.
6. Leave it on for 10-15 more minutes, stirring occasionally to make sure everything gets a chance to crisp up.
7. At the end, stir in salt to taste, and if you've got 'em handy, about 1/2 teaspoon each of garlic power and smoked paprika. Turn heat off/low, stir the seasonings in and let them blend in there for a few more minutes.
Now you are eating home fries... the BEN's FAMOUS way!

Have you tried this with bacon grease in the stead of olive oil?

Yes, this morning in fact. The difference was (surprisingly) negligible, so this cuts out the extra prepwork for that (unless you have the grease handy already) and is slightly "healthier". But sure, replace the EVOO with bacon fat if you'd like.

That’s basically it, aside from using bacon or sausage grease! lol olive oil lol
Glad you dig this style of breakfast potato. I find it easier too than frozen hash browns that tend to stick to the pan.
Edit: I see the rest of the gang already pointed out the obvious. Onion is a requirement, ICJ.
I’ve also never bothered steaming.. might have to try that.
Seasoned salt works well with this too.
