Pinto Beans

Ingredients:
-1 smallest package of dried pinto beans
-1 white or sweet onion
-2 tablespoons of salt
-1 tablespoon of black pepper
-Almost 1 tablespoon sugar
-Leftover ham bone (frozen is fine) or a couple strips of bacon or even something healthy to thicken broth like kombu.

Prep

The night before making this, sort your beans to make sure there are no scrappy beans or rocks.

Put in strainer and rinse. Put beans in bowl or pot. Fill pot with cold water. Leave until next day..

Rinse beans once more. Put in crockpot. Add half the onion (rougly diced) and all seasonings above. Add water until there is about 1-2 inches of water above the top of beans.

Cook on high for aboit 5 hours until beans are soft. Done.

I did a version of this over the weekend. Almost the same, except:

1. After soaking overnight, put beans in pot with onion, pork neck bones (or whatever), 1 quart of chicken broth and 1 quart of water. Simmer, covered, for two hours.
2. Remove bones, separate meat and add meat back to pot.
3. Boil uncovered until reduced to a creamy consistency.
4. Season with salt, pepper and garlic powder (no sugar).

This is the best thing I ever ate.
