I have made beef borscht. It is awesome, I know RobB and his ultra American anti-commi ways may not approve, but then he misses out.

It is awesome,
Most peasant food is, because it's often a staple that poor people live on for years, and if it doesn't really taste good they'll hate it.

It has nothing to do with the political leanings of where something comes from. Cabbage soup is another item from that part of the world, my mother made it all the time, it was really good, and my mother was further to the right than the John Birch Society, she was a virulent anti-communist. (So am I, but for different reasons.)

Actually, the Russians that shot down that Malaysian jet just won first prize in a borscht competition when they canned some of the plane's settled human/fuselage goo.

I substituted the red wine vinegar with apple cider vinegar. I used beef shank and cubed stew beef.

I'm growing purple carrots so once they and the beets are mature and i make a batch it should make for a REALLY deep colored stew. Oh, and the sour cream dollop and fresh dill make a big difference.
Speaking of which I should go plant some more dill.
