The habanero version is fantastic. The green one I have in the collection is not, which is probably why I forgot I even had it before I cleared out the cupboard for this display.

I guess when you have that many hot sauces you don't refrigerate them? WHY do I refrigerate mine? Is that a bad plan?

I have never refrigerated hot sauce. I also used to never refrigerate ketchup until my Northerner girlfriend moved in with me and was horrified. I hate cold ketchup lol

1. If you have a sauce in hot rotation, it doesn't need refrigeration because you'll use it up before it gets within a year of expiring.
2. If you put your hot rotation sauces in the fridge, sure, you're doing it "right", but then they're harder to pour, they're cold, and they have a slightly thicker consistency which isn't always desired.
3. The right thing then is to put the ones OUT of rotation in the fridge, which:
A. Most people don't have "out of rotation" sauces, because they don't have dozens of them like a maniac.
B. That's valuable fridge shelf space for stuff you're admitting you're almost never going to use.
Ultimately, the ones that need to be in the fridge are the ones you don't care about in the first place.
So, fuck it. If you have a sauce you like and use a lot, refrigerate it or not, it'll be gone long before it would have mattered one way or the other.

I think with unlimited fridge space I would probably keep all of them in there except for the ones in hot rotation. And Sriracha. Sriracha never belongs in the fridge. I don't know why that's my opinion, but it is.
