Straight-ahead chili.

Nothing fancy, just a solid, simple recipe.

2 lb ground beef (or other)
1 onion, diced
4 cloves garlic, minced
2 tbsp flour
4 tbsp chili powder (or 3 + any other spices you like)
2 tsp cumin
2 tsp salt
1 tsp sugar
1 tsp pepper
2 cups water
1 cup beef broth or beer
1 can (15oz) tomato sauce
1 can (15oz) beans, drained (optional)

1. In pot, brown beef with onion and garlic.
2. Strain out excess fat/grease.
3. Add flour, chili powder, cumin, salt, sugar, pepper, stir together for 1-2 minutes.
4. Add water, broth or beer, tomato sauce, and beans.
5. Simmer for 1-1.5 hours until desired consistency is reached. Add water if too dry.

There ya go. Can't-miss.

Minor modifications yesterday resulted in a very enjoyable product yesterday:

2 tbsp chili powder
2 tbsp New Mexican ground chili
1 tbsp ground chipotle chili
1 tbsp cumin
1 tbsp dried Mexican oregano
1 tbsp sugar
1 can tomato sauce
1 can diced tomato
1 can beef broth
1 can water (wash out the tomato sauce can)
2 cans beans
Splash or two of red wine vinegar at the end
all else the same

There's more liquid, so it took about 3-3.5 hours to simmer to proper consistency, but the finished product was excellent, and it looked like this:

Is it spicy? Did it eat the enamel off'n the bowl? That looks pretty good on a cold and wet Sunday.

It is not very spicy(*) because of the delicate palettes of the diners in this house.

It was terrible from Tuesday evening (it's not like me to leave half an expensive steak on a plate) to yesterday afternoon. However, with enough omeprizole and Pepto and time, today I woke up and wasn't nauseous and could swallow mostly without pain and the urge to gack it back up immediately. Also I ate a burger for lunch, which was inconceivable for the past five days.

So it's time for a BOWL OF RED.
