[RECIPE] German Potato Salad

[RECIPE] German Potato Salad
This was almost entirely lifted from another website, but I changed a couple numbers and techniques it came out perfect, so fuck that place.
2 lbs gold (or red) potatoes, peeled, half inch dice.
1/2 white onion, finely diced.
3 strips bacon, roughly chopped.
1.5 tbsp white sugar
1/4 cup apple cider vinegar
2 tbsp water
1.5 tsp salt
1/2 tsp pepper
2 tbsp finely chopped Italian parsley.
- Combine vinegar, sugar, salt, pepper, and set aside.
- Put potatoes in pot with enough water to cover. Bring to boil, simmer for 10 minutes or so until just fork tender. Drain potatoes and set aside.
- Wipe pot clean, put bacon in there over medium-high until crisped up. Remove bacon, place on paper towels to cool, but leave bacon grease in pot. Once bacon has cooled, crumble it on up into bits.
- Reduce heat to medium, add onions to bacon grease, stir until starting to brown and all the yummy bacon leavin's have been scraped up, about 6-7 minutes.
- Add vinegar mixture, bring to simmer and reduce for a couple minutes until slightly thickened.
- Lower heat, add potatoes, bacon, and parsley in there, stir completely until it looks like German potato salad and is warmed through.
- Keep warm until ready to serve.

Here we go fuck yeah. I'm gonna try to pair this with some rouladen or shnitzle soon.
I fucking hate "Southern" cold potato salad despite being surrounded by it. Warm German potato salad is where it's at.

Request for clarification: I thought 'German' potato salad has mustard in it, to give it the 'traditional' yellow color. Is that another German type or not related? And don't knock cold potato salad, I like it that way. Call me <insert word for uncultured barbarian>, but I like the premade tub kind from Target, both white and yellow, which I believe is what they called German, so what do I know?.

I didn't know german salad had mustard in it, i always just figured it was that warm vinegery mush? does it have mustard in it?

Cassie, it is great to have you here as part of the Jolt Country BBS community.
The recipe threads are a "shining jewel" of the site, where we all pretty much get along, and there is little swearing, cursing and yelling.

Oh thanks! i didnt actually come here looking for potato salad, although this did show up on a search for vegetable soup which is how im here I guess? Im making the soup tomorrow so well see how it goes. I dont like lima beans so i'll leave those out, too mushy and grainy
