Huevos con chorizo y queso fresco
1. Fry up about a four-inch piece of chorizo (removed from casing). Set aside.
2. Grill up some tortillas. Put them on a plate.
3. Lightly fry up two eggs in clarified butter with a sprinkling of salt. Put them on the tortillas.
4. Top eggs with chorizo, queso fresco, salsa verde, crema Mexicana, or whatever other random Mexican-style ingredients you've got lying around.
5. Garnish with cilantro, move into a sunny, oceanside apartment, serve, and enjoy!
