I made these for the past couple Easters including today!
I don't do much different aside from starting with a whole stick of butter and a whole chopped up onion that I later add milk, then the shredded cheese, then quickly whisk in 2 eggs before pouring it over the thinly sliced potatoes I boiled for about 10 minutes to get extra soft in the end.
I also add some Cheyenne pepper before adding paprika. A few bread crumbs or crushed corn flakes with some dried chives on top is cool too. I don't use flour for this.
